Tasting
According to the science of pálinka-tasting the precondition of having full-experience is the harmony of APPEARENCE, FRAGRANCE and TASTE.
Appearance - A good pálinka is totally transparent and colourless but there are two exceptions: The colour of ’aged pálinka’ can vary from pale yellow to dark yellow, and the colour of ’bedded pálinka’ varies according to the colour of the fruit-bed on which the pálinka was aged.
Fragrance - The fragrances in the glass can evolve the most at the medieval room temperature that is 16-19 C º. The temperature of the refrigerator is too cold: it does not let the fragrances evaporate from the bottle.
Taste - Pálinka-tasting can only give you a real experience, if you taste it slowly, in little sips. Its flavour can be best felt in the corners of the mouth, as well as under the tongue and around the tasting receptors.
